Chanberry and Mint Protein Pancakes

Cranberry and mint protein pancakes! 

Super easy to make too!

1 cup #oats
2 scoops #proteinpowder
3 #eggwhites
1 whole #egg
1 1/2 tsp #cinnamon
2 tbsp #coconutoil
1 tsp baking powder
1 tbsp dark #agave/#stevia/#honey
50g #darkchocolate chunks (I used #Lindt dark mint chocolate broken into small chunks)
2-3 tbsp dried #cranberries
Handful of fresh mint leaves (or 1 1/2tbsp pure mint extract)
2-3 tbsp water

Put all dry ingredients in the blender and blend until powdered, add the eggs, coconut oil and sweetener and blend until smooth, if needed add the water. Then add the cranberries and chocolate and mix with a spoon. Cook on a preheated DRY non-stick pan for around 1 minute on each side. #enjoy!
