Pork Afritada

Ingredients

2 lbs pork belly (liempo); cut into cubes about 1"x1"
1 carrot; sliced in 1" thick
1 potato; quartered
1 bell pepper; sliced
3 bay leaves
1 onion; chopped
6 cloves garlic; minced
1 can tomato sauce
1/2 tablespoon flour
1 teaspoon of fish sauce (patis)
Salt and pepper
Water
Cooking oil

Directions

1. In a saucepan, sauté garlic and onion.
2. Add pork and saute until all liquid is gone.
3. Continue to saute until pork starts to render fat.
4. Season with salt and pepper. Simmer for 3 minutes
5. Add water, litle by little just enough to make a nice looking sauce. Simmer for few minutes to tenderize the pork.
6. Add carrot, potatoes, bell pepper, and bay leaves. Simmer for few minutes to cook the vegetables.
7. Add tomato sauce. Simmer for 5 minutes.
8. Season with fish sauce according to desired taste.
9. Add flour to thicken the sauce.
10. Serve.
